Pre- heat grill to medium high. Bring a pot of salted water to medium boil on stove top.
Heat skillet to medium high. Add 1T oil & 1T unsalted butter, swirl. Season sea bass with salt and white pepper. Place sea bass in pan presentation side down. Sear until golden brown.
- Cut radicchio in quarters. Wrap each quarter with one strip of bacon and secure with skewer while grilling.
- Drop brussel sprouts in water for 1-1/2 mins until vibrantly green. Season with little oil -salt and pepper.
On your favorite plate spoon brush slightly thickened and seasoned heavy whipping cream. With a demitasse spoon drop tiny dots of black garlic molasses randomly on cream. Run a skewer through the molasses making tiny hearts. Place wrapped radicchio on plate as well as the seasoned Brussel sprouts. Place sea bass on plate and garnish Brussel
sprouts with dried rose pedals.
