- Using a heavy bottom sauce pot, heat the milk and pastry cream together. Be sure to whisk well.
- Once the milk/pastry cream mixture has started to simmer, whisk in the chocolate, vanilla, chipotle, and cinnamon.
- After the mixture has been whisked well and all chocolate has been dispersed evenly, remove from the heat and hot hold until ready for service. Thin the mixture with a small amount of milk if it begins to thicken.
