- Mix together mayonnaise and Dijon mustard. Spread the mixture on both slices of bread.
- Spread sliced ham on one slice of bread, spread 1/3 cup of shredded cheese on the ham and top the cheese with the second slice of bread.
To prepare the mornay sauce:
Bring 1/2 cup of water to boil.
Whisk the cream base into the water and keep cooking until simmering and the base has thickened.
Add 1/3 cup cheese and blend off the flame until cheese is fully melted.
- Melt half the butter in a frying pan over medium heat. Brown the sandwich on one side, remove from pan, melt the rest of the butter and cook the other side.
- Place the sandwich on a sizzle plate, spread the mornay sauce on top of the sandwich, spread the cheese on top of the sauce and melt the cheese in a broiler or in an oven until the cheese is bubbly and browned. Cut in half and serve immediately.
