1. For the salad, shave thin the red onion, cucumber and slice the grape tomatoes in half, mix in a bowl with salt, pepper, lemon juice and olive oil. Reserve chilled.
2. For the fish, and fries, deep fry at 350° until done 3-5 minutes, and grill the pita bread 30-45 seconds on each side. Season fries with pepper supreme.
3. For the plate, place the French fries on the bottom and assemble the gyro with tzatziki on the bottom to act as a glue for the fish and salad. Place 2 pieces of fish and top with the salad. Finish off with more tzatziki sauce and wrap with foil to serve.
