Ingredients
Directions
- In a large sauté pan, add the oil, mushrooms, yellow onion, carrots, jalapeño, and garlic; cook for 10 minutes.
- In a bowl, mash half of the drained black beans with a fork or potato masher.
- When the mushrooms are completely dry, add the mushroom mixture, whole black beans, oats, green onions, cilantro, corn starch and seasonings to the mashed black beans. Begin to fold together and incorporate well. Taste for seasoning and adjust with salt and pepper, if needed. Refrigerate the bean mixture for at least 2 hours.
- Once the bean mixture is chilled, form it into 4 to 6-ounce patties (about ½ to ¾-inch thick). Cook the patties in a sauté pan with oil, searing for 3 minutes on each side.
- Serve burgers in buns with optional toppings.
Chef Tip: Serve bean burgers with oven-roasted sweet potato fries.
