Directions

  1. Follow the instructions on the package and make the mash potato finish with olive oil to keep the mash vegan. Keep hot and reserve for assembly of the shepherds pie.
  2. ¼ inch dice the onion and set aside
  3. In a sauté pan on high heat place 2 tablespoons of oil and begin by sautéing the chopped onion, chopped carrots and peas. Add the vegan crumble and continue to cook add the tomato paste, chopped thyme and season to taste. Add the water and mix well let simmer for 4-5 minutes on low.
    Reserve hot to assemble the shepherds pie.
  4. In an oven safe pan fill ¾'s with the vegan crumble mixture. Pipe the potatoes with a straight tip on top as shown in the picture. Place in oven at 400 degrees for 3-4 minutes to brown the top, garnish with chopped parsley.
