- Using melon baller, ball watermelon. Set aside.
- Place all greens, shaved red onion and cucumber into a stainless steel bowl. Add vinaigrette. With gloved hands, mix well.
- Turn out dressed greens and veggies into a chilled entrée bowl, emphasizing height. Place 5-6 melon balls around and on top of dressed greens.
Crumble feta over the top. Sprinkle freshly cut mint over the top of feta.
Optional: drizzle with Corto extra virgin olive oil to finish. Serve immediately.
