Directions

  1. Dice tomatoes, onions, and jalapeños, then chop cilantro and crumble cotija. Reserve until ready to assemble.
  2. Heat turkey sausage and egg scramble to an internal temperature of 135°F or higher (Serv Safe Standard = 135°F for 15 seconds). Hold hot until ready to assemble.
  3. Portion 3 ounces of tortilla chips onto a platter or large plate. Top evenly with 4 ounces of turkey sausage breakfast filling.
  4. Finish by garnishing with 2 ounces of salsa verde, crumbled cotija, onions, jalapeños, cilantro, and tomatoes.

CHEF'S NOTES

This breakfast filling is an extremely versatile item for all types of applications including burritos, quesadillas, street tacos, breakfast pizza. Chunk turkey sausage blended with scrambled eggs in a cheddar cheese sauce accented with shredded hash brown potatoes make it a complete option.
