- Dice tomatoes, onions, and jalapeños, then chop cilantro and crumble cotija. Reserve until ready to assemble.
- Heat turkey sausage and egg scramble to an internal temperature of 135°F or higher (Serv Safe Standard = 135°F for 15 seconds). Hold hot until ready to assemble.
- Portion 3 ounces of tortilla chips onto a platter or large plate. Top evenly with 4 ounces of turkey sausage breakfast filling.
- Finish by garnishing with 2 ounces of salsa verde, crumbled cotija, onions, jalapeños, cilantro, and tomatoes.
