  1. Heat Chorizo con Papa to an internal temperature of 135°F or higher (Serv Safe Standard = 135°F for 15 seconds). Hold hot until ready to assemble.
  2. Pan fry corn tortilla in a small amount of canola oil until crispy and golden in color. Place on a paper towel to absorb any excess oil.
  3. Plating procedure: Portion the Chorizo con Papa onto the crispy tostada.
  4. Garnish with freshly diced tomato and sliced avocado. Finish with the crumbled cotija cheese and serve immediately.
