- Toss apples, sugar, fl our, lemon juice, cinnamon and nutmeg in a bowl.
- Dust work surface with flour; unroll puff pastry and cut into 12 (3-inch) circles. Repeat with remaining puff pastry sheet.

Arrange 12 puff pastry circles on a parchment-lined sheet pan. Place
2 tablespoons apple mixture and 1 quarter Sharp American
Premium Slice on each circle; top each with remaining 12 circles. -
Seal edges of pies; brush tops of pies with egg and sprinkle with salt
and thyme. - With paring knife, cut 3 small vents in top of each pie.

Bake pies at 400˚F or until golden brown, about 20 minutes. Serve
topped with caramel sauce. Makes 12 mini pies.
