Directions
- Clean and rough chop 1 Honeydew melon, 1 peeled red bell pepper, 1 peeled and seeded cucumber, 8 basil leaves, 1 garlic clove and ½ red onion medium. Combine all ingredients in an airtight container along with ¼ cup olive oil and 2 tablespoons apple cider vinegar, salt and pepper to taste and refrigerate overnight.
- Place all ingredients in a blender and process until smooth (90 seconds). Strain through medium sieve and check/adjust seasoning. Chill and reserve.
To Plate:
- Pour Gazpacho into a bowl and garnish with your choice of crab. Optional garnish with basil leaves and pea shoots.
