- Dice onion, chop mint, slice cheese and peaches.
- In a hot pan, sear cheese with a little olive oil till golden brown. Set aside.
- Saute onions and corn blend till warm. Squeeze lime over mixture, add mint and honey, stir and set aside.
- Brown peaches in pan or grill.
- Assemble by mixing together and placing peaches on top with a sprig of mint.
