This is a great burger to use leftover onions. Since caramelizing them does take time, you can simply sear them at a higher heat. Recipe works well with any Fulton burger patty.
- Cut onions in julienne from end to end. Do not cut salad slice. Sweat onions in oil with thyme sprig and a pinch of salt. Reduce heat and let caramelize until golden brown, about 30 minutes. Remove thyme sprig and mix in beef base.
- Whisk together mayonnaise and Dijon.
- Season burger patties lightly with salt and pepper. Sear burger on both sides. Top with cheese and let melt.
- Spread mayo mixture on both sides of bun. Top bottom bun with burger, spread on caramelized onions, and top with crispy onions and arugula.
