Directions
- For the shrimp, remove the shell and place on a bowl.
- For the marinade, in a bowl juice and zest the lemons and mix well with the avocado oil. Season with salt and pepper and reserve.
- Marinate the peeled shrimp in half of the marinade for 30 minutes. Place on a skewer and grill or sear in a large pan 2–3 minutes. Let rest and come to room temperature.
- For the plate, slice the cucumber and red onion toss with the remainder or the marinade. On a plate place the cucumber and red onion, mixture as flat as possible. Toss the shrimp with the tzatziki sauce and place on top the vegetables. Garnish with the fresh oregano and fine julienned red bell pepper. Serve with pita chips or lettuce cups.
