Directions
For Carnitas
- In a large pot, melt lard. Add pork and all other ingredients, except the beer.
- Bring to boil, then lower heat to medium and cook stirring every 10 minutes until pork is golden and falling apart. About 90 minutes.
- Reduce the heat to low and add the beer. Cook another 20 minutes. Turn off heat and let mixture rest at room temperature.
For Spicy Tomato Sauce
- Add canola oil to medium sized pot, sauté onion and garlic. Add Chile de arbol, stirring frequently until chile begins to develop color
- Add tomato and 3 1/2 cups of water. Bring to a boil and reduce to simmer. Add cumin and oregano and continue to simmer for 45 minutes.
- Blend all contents with vinegar and adjust with salt.
To Serve
- Warm bread in oven until golden and crunchy and split in half.
- Spread beans on bottom half of bread top with carnitas and 1 slice cheese.
- Spread guacamole on top half of bread. Top Sandwich.
- Ladle warm tomato sauce over entire sandwich. Top with pickled red onions and jalapeño.
