- Gather equipment & ingredients.

On flat griddle or pan, add clarified butter and gently toast both sides of
each bread. Move to board and smear 2oz of the hummus on each slice. -
For the avocado...Peel and pit avocado. Slice thin and fan over hummus.
Dust with a touch of kosher salt and everything. Garnish with half of the
micro greens -
For the salmon...fold salmon slices over hummus. Garnish with capers,
feta, fresh dill & lemon aioli...Pinch of kosher salt. -
For the tomato...slice heirlooms to preferred size and layer over hummus.
Garnish with goat cheese, balsamic glaze & remaining micro greens,
Pinch of kosher salt.

In a stainless steel bowl add mayonnaise, zest and juice of lemon, sugar,
salt & pepper. Whisk to incorporate ingredients. -
Let sit for 3 hours or overnight for best flavor. Place into a squeeze bottle
and reserve for use.
Chefs Notes
The trio is cool but when done together but needs to be priced accordingly as a shareable entrée or app. Each individual toast could be done separately as well and may generate higher profits
