Prep: for the onions, sweat until translucent with 1 tablespoon avocado oil and season to taste (for the authentic cheesesteak shop-- they don't fully caramelize their onions! just a touch of color). Once cooked, reserve. Slice scallions on a thin bias and hold in ice water to "curl". Warm the cheese sauce and make the "jawn" sauce, transferring to a squeeze bottle with a wide spout.
Deep fry the fries at 350°F for about 4 minutes.
While the fries are frying, add remainder of the avocado oil to your350 degree flattop and add the cheesesteak meat to the flattop. After the portion has cooked through about half its thickness, flip the portion once. As the meat slices begin to cook, separate them with 2 spatulas and chop a little.
Plate: on a quarter sheet tray with a piece of checkered paper add the fries, drizzle the fries with a 1/2 cup of cheese sauce and scatter the cheese steak meat, onions, scallions, and cherry peppers over top to evenly distribute. Drizzle the "jawn" sauce and sprinkle toasted sesame seeds over top to finish. The sesame seeds reference a classic cheese steak on a seeded hoagie roll.

In a medium mixing bowl, stir all ingredients together until well
combined. Transfer to a squeeze bottle.
Chef's Notes - Jawn: (chiefly in eastern Pennsylvania) used to refer to a thing, place, person, or event that one need not or cannot give a specific name to. This sauce is a "Jawn" sauce as an ode to Philly, and because it's got everything in it. The sesame seeds reference a classic cheesesteak on a seeded hoagie roll.
