Directions
- For the gumbo gravy, heat in a pot until it comes to a boil and then simmer. Reserve hot.
- For the mash potatoes, place in a large pot of water and bring to a boil then simmer until hot.
- For the chicken, season with salt and pepper and grill or sear in a pan.
- For the haricot verts, sauté in the pan and season with salt and pepper.
- For the plate, place the mash potatoes and haricot verts in the center. Top with the grilled or seared chicken and ladle with gumbo gravy.
