- Preheat the oven to 350 degrees, fryer to 350 degrees, and the flat top to 400 degrees.
- Once the fryer reaches temperature, place the potato chips in a fryer basket. Fry for 3–4 minutes, or until crisp.
- Remove from the fryer, season with sriracha, and arrange in the serving vessel. Set aside.
- For the frankfurter, when the flat-top reaches 400 degrees, place on the surface.
- Sear on all sides until the internal temperature reaches 165 degrees. Hold in a warm area for later assembly.
- For the chili, place it in a heavy-bottomed pot. Heat until it reaches 250 degrees. Keep warm until needed.
- Chop the cilantro and set aside for garnish.
- To Assemble, place the frankfurter into the roll. Spoon chili over the frankfurter, then add cheese. Place it in the oven for 1 minute, just until the cheese melts. Remove from the oven and garnish with crispy onions and cilantro. Serve on a tray alongside the seasoned potato chips.
