- Combine cinnamon stick, peel from ½ lime (no pith), cream, rice and 2 cups water in a small saucepot; bring to a boil. Reduce heat to low; stir in sugar and raisins. Cover saucepot and simmer for 35 minutes, stirring occasionally, but increasing the frequency during the last 5 minutes of cooking to avoid scalding. Remove from heat and allow to cool to room temperature. Remove and discard lime peel and cinnamon stick.
- Serve rice pudding garnished with coconut, lime zest, a bit of lime juice, and lime wedges.
