Stout and Lamb Filling
- Heat oil in a saucepan over medium heat; add carrots and onions and cook until slightly tender, about 6 minutes, stirring frequently.
- Add stout and cook until reduced by half, about 20 minutes. Add Sous Vide Braised Lamb Shoulder, peas, salt and pepper and remove from heat. Refrigerate in an airtight container up to 4 days. Makes about 2 cups.
For serving
- Place Stout and Lamb Filling in center of puff pastry square; fold over to form a triangular shape.
- Seal edges of pie with fork; brush top with beaten egg. Bake at 400˚F until golden brown, about 20 minutes.
