- Turn oven on to 425°F. Turn grill on high.

Peel and cut ends off of onion. Cut in half. Cut pepper in half and remove seeds. Coat the tomatoes, onion and pepper in olive oil, salt and pepper evenly. Place on baking tray. Evenly coat potatoes in oil, salt and pepper.
Place on a separate baking tray. Put both trays in the oven and cook vegetables until onion is soft, approximately 15–20 minutes. Cook potatoes in oven till soft, approximately 20 minutes.
- Remove burnt outside of onion. Place vegetables in blender for about 1.5 minutes and reserve. With the back of a spoon or fork, lightly press down on the potato to slightly break them apart.
