Nuts & Bolts Detroit Pizza
- Assemble the pizza
- Use 20 ounces of pizza dough (see directions for dough below).
- Use 6 ounces of pasta sauce (see directions for sauce below).
- Use 6 ounces of cheese blend (see directions for cheese blend below).
- Layer the pizza topping ingredients onto pizza as desired.
Pizza Cheese Blend
- Shred the havarti and white cheddar cheese and mix with mozzarella cheese.
Pizza Sauce
- Blend two cans of 74-40 and 1 can pizza sauce.
- Then add the crushed red pepper and the third can of tomato sauce.
- Cook the pizza sauce for 15 minutes.
Detriot Style Pizza Dough
- Put in mixing bowl semolina flour, sugar & dry yeast. Mix one minute and stir.
- Let the mix sit for 15 minutes until the yeast starts activating and it starts to foam in the bowl.
- Then add the flour & salt and mix until it has a 6 inch stretch.
- Then let rest at room temperature for 1 hour.
- Then place in oiled pans and press 5 times to fill pan about 2/3 of coverage.
- Then let sit 20 more minutes and then press out the dough to fit the pan.
- Then let rest for 2-3 hours or until the dough rises to 1/3 of the pan height.
