For the Sauce:
Makes about 1 cup.
- Whisk all sauce ingredients in a saucepan.
- Cook over medium-high heat until just boiling.
- Reduce heat to medium low and simmer until slightly thickened, about 20 minutes.
- Refrigerate in an airtight container up to 6 days.
For the Wraps:
- Brown the meat crumble in the pan and add 1/2 of the sauce. Cook until incorporated.
- Fill lettuce leaves with crumble mixture.
- Top with scallions, shaved cabbage, red pepper, carrots, shaved radish, cilantro, mint, chopped peanuts and toasted sesame seeds.
- Drizzle with sweet ponzu glaze.
