- For the cocoa whipped cream, in a large clean dry bowl, whip the heavy cream until stiff peaks form or a shaving cream consistency. Add the cocoa powder and mix once again until well incorporated. Place in a ping bag and reserve for the plate.
- For the plate, place the red velvet cheesecake on the plate and drizzle the strawberry sauce on top. On the side of the cheesecake, pipe the whipped cocoa cream on the plate and garnish with the white chocolate curls.
