- Whip the heavy cream in a clean bowl until stiff peaks. Gently fold in the strawberry compound with the cream. Keep cold.
- For the strawberries, quarter the strawberries and macerate in a bowl with the lemon zest and the bitters.
- For the plate, place defrosted Strawberry Ganache Cake on plate and surround base with macerated strawberries. Pipe strawberry whipped cream around strawberries. Grate Valrhona Strawberry Chocolate over the entire dessert. As an option for plating, cut the cake in half to show the inside for a more dramatic presentation
