Directions
- For the potatoes, place in a pot with salted water and cook until the potatoes are tender, about 10-12 minutes. When done place on a sheet pan and place in a 350°F oven for 2–4 minutes just to dry the potatoes. Remove and lightly smash with a metal spatula. You want the potatoes to be about ½ inch thick, place in the cooler and reserve for later.
- For the bacon, place the bacon on a lined sheet pan with another piece of parchment paper on top and another sheet pan this will keep the bacon from curling. Cook in the oven at 350°F for 15 minutes. When done remove and reserve hot.
- For the frittata, bake in the oven at 350°F for 15 minutes until an internal temperature of 165°F. Reserve hot.
- For the plate, fry the potatoes in the deep fry at 350°F for 2–3 minutes until crispy. Plate with the bacon and then the frittata.
