Apple Cranberry Ginger Galettes

  1. To prepare the filling, combine the pie ingredients in a large mixing bowl, including apples, cranberries, raisins, zest and juice of 1 orange, a peeled and grated 2-inch knob of ginger, granulated sugar, cinnamon, allspice, nutmeg, cloves, and cornstarch. To prevent excess liquid and sogginess, use a slotted spoon to fill the pie shells.
  2. For the topping, use a food processor to pulse together the topping ingredients—flour, oats, walnuts, brown sugar, salt, and butter—until the mixture just comes together, creating a crumbly texture suitable for sprinkling over the pie filling.
  3. To assemble and bake, if using pie sheets, cut six 6-inch circles of pie dough. Evenly distribute the filling among the circles and fold up the edges, leaving the center exposed. Divide the topping equally among the pies. Brush the pie dough with an egg wash and, if desired, sprinkle with sanding sugar.
