Directions
- Precook Portico Bikini Shrimp - Toss shrimp in Spiceology Buffalo Lemon Pepper and bake off at 350* until fully cooked. Once cooked cool shrimp in walk-in cooler.
- Precook Beef Burnt End Sausage - Cut links in half length wise roast in 350 degree until golden brown around 5-7 minutes. Cool sausages all the way down. Once cooled cut each sausage half into thirds length wise than in half width wise to get a total of six sausage strips for each half link.
- In a bowl mix Zing Zang Bloody Mary mix, roasted tomato wedges, bikini shrimp, and the burnt end sausages all together to let marinate and hold cold. This is all prepped before service making this a very easy and quick dish to pick to order.
- Plate - Present in a white bowl, 5 Portico Bikini Shrimp, 6 Strips All Beef Burnt End Sausage, 7 Tomato Wedges, 6oz of Zing Zang, all mixed together and try to build up giving the dish some height. Garnish top with Micro Cilantro.
