Cheddar Beer Battered Shrimp

1. Prepare brine and let shrimp rest in brine for 30 minutes.
2. Prepare Sysco Classic All-Purpose Batter. Set aside additional 1 cup of dry batter mix for dredging shrimp.
3. Dredge drained shrimp first in DRY Sysco Classic All-Purpose Batter mix.
4. Dip each shrimp by the tail into the prepared WET batter mix, let excess drain off.
5. Using a swimming method, carefully place shrimp into fryer and cook until shrimp are golden brown and fully cooked.
6. Serve with your signature dipping sauce.
