- Combine diced onions with chopped cilantro leaves and blend well. Add olive oil, fresh lime juice, and salt & pepper to taste.
- Griddle or pan fry corn tortillas on medium heat in oil until soft & pliable. Stack on a paper towel to absorb excess oil.
- Heat chorizo con papas to an internal temperature of 135°F or higher (Serv Safe Standard = 135°F for 15 seconds).
- Portion 2 ounces of chorizo con papas into each double-stacked corn tortilla.
- Top with salsa verde, cilantro, onions, and Mexican crema.
