Directions
- For the maple ricotta, in a bowl mix the ricotta with ½ tablespoon of the maple syrup, set aside for plating.
 - For the French Toast, mix the eggs with the cinnamon and then add the milk. In a buttered pan dip the bread in the custard mix and then pan sear on medium heat cook on both sides 1–2 minutes per side. When done reserve hot.
 - For the plate, stack the French Toast on the plate and garnish with the fresh berries and the maple ricotta. Finish with the powdered sugar, the remaining maple syrup and mint.
