FOR THE PLATTER
Directions
- Set your oven to 375°F and set your fryer for 350°F.
- In medium saucepan add Chili beef brisket and bring it to simmer on medium heat for 15 min. Reserve hot.
- In small skillet add the chicken Quesadilla and place in the oven for 8 min. Reserve hot when done.

Deep fry the spring roll Chile relleno, swirl fry, waffle waffle fry, meatballs, chicken wings, and Santa Fe eggrolls drain well and reserve hot. While frying the meatball in a nonstick pan add the Firecracker sauce and have it on low heat, add the meatball to the pan and deglaze it with the lime.
When it's coated and shiny, add to the bowl or plate. - To assemble the platter, cut the eggroll and the spring roll in half on the bias. Begin placing the items on the platter and garnish with carrots and radish for color. Place the sauces on the platter and finish assembly with all items. Enjoy.
FOR THE FIRECRACKER SWICY SAUCE
- Add all the ingredients to a small saucepan and bring to simmer on medium heat (make sure the sugar dissolves). Once cooled it can be stored in the cooler.
