Sweet and Sour Pickles
- Slice the cucumbers into very thin coins (a mandoline works well for this job) and thinly slice the shallot as well. Add both to medium size bowl.
 - In a smaller bowl, whisk the rice vinegar, sugar, grated ginger, salt and chile flakes together until the sugar has dissolved and pour over the cucumbers, tossing lightly to coat.
 - Cover and refrigerate for at least 30 minutes or up to 3 days.
 
Gochujang Slaw
- In a medium bowl mix juice of both limes and gochujang together. Next add Asian slaw mix to the bowl, toss until vegetables a evenly coated. Chill until needed.
 
Gochujang Burger
- Season burger patty with salt and pepper. Grill to requested temp.
 - Warm bun until soft.
 - 
                          Build burger in this order: 1. Bun bottom. 2. Pickles. 3. Burger patty. 4.
Slaw. 5 Bun top. - Add fries or other side as requested.
