- For the peas, in a large saucepot, place the butter and shallots, and begin to sauté. Add the peas and continue to cook. Add 1 cup of water and simmer for 3 minutes just to soften up the peas. Strain the peas, reserving the water. Purée peas, mint, and salt and pepper to taste in a blender, adding reserved water, if needed. Once smooth, reserve hot.
- To plate, place the purée in a bowl or plate, and drizzle with oil and garnish with mint.
