Olive Oil Citrus Cake with Blueberries and Lemon

1. Remove cake from the tray while still frozen. Thaw under refrigeration overnight (preferred method) or at room temperature for 3 hours. The cake is best served ambient, but it may be heated (20 seconds in a microwave oven from refrigeration) and served warm, maintaining its moisture.
2. Brush jam on a plate. Add cake.
3. Add lemon slices and blueberries, then garnish with mint and serve.
