- In a 350°F fryer, flash fry the pork belly for approximately 90 seconds to heat and crisp. Place to the side. In a bowl, mix the mayonnaise and hoisin sauce together. Season with the juice of half a lime. Slice the roll in half and spread the hoisin mayo on the bread. Place the pork belly on the bottom and then layer the dressed vegetables on the sandwich and add approximately 2 sprigs of cilantro. Slice the sandwich on a long bias to serve.
- For the dressed vegetables, combine the cucumber (half moon sliced), carrot, jalapeno(julienned). Add the sesame oil, rice vinegar, remaining ½ lime juice and sugar to taste. Allow to marinate for 10–15 minutes. Then serve.
