- For the grits, place the boil in the bag grits in a large pot and bring to a boil then lower to a simmer for 30 minutes until the grits are hot all the way through. Reserve hot.
- For the shrimp, in a sauté pan drizzle the avocado oil in and let get hot. Season the shrimp with the Cajun seasoning. When the pan is just about to smoke, place the shrimp in and sear 1-2 minutes on each side. When the shrimp begins to curl, slightly turn off the gas and let the residual heat in the pan finish cooking the shrimp.
- For the plate, in a bowl or large plate, place the grits down and lay the shrimp on top. Sprinkle with chopped green onions and a drizzle of the avocado oil. As an option, you can serve with a grilled lemon half.
