- Heat olive oil in a pot and add the lime juice, onion, cilantro, bell pepper, oregano, cumin, and garlic. Cook until the onions become translucent and garlic has seeped into the mix. Make sure to add salt and pepper to taste. Once done, remove and let cool.
- Take sirloin flap and cut into portion size steaks (8 oz recommended for this recipe).
- Place meat in container and cover with marinade that has cooled down. Let sit for at least 4 hours, the longer it sits the better it will taste.
- Cook steak to desired temperatura and serve with yuca fries. Chimichurri sauce is optional.
