- For the pork pastor, in a large pan or flat top grill, add 2 tablespoons of avocado oil and the pork pastor and cook. Remove when cooked and reserve hot.
- Using the remainder of the avocado oil, cook ½ of the small diced onion and diced pineapple. Season with salt and pepper to taste. Caramelize the onion and pineapple 6-8 minutes. Combine with the pork pastor and heat through. Remove and reserve hot.
- Heat the tortillas and wrap in a cloth to keep hot for plate up. Cut the 2 limes into wedges and squeeze over the pastor, pineapple, and onion mix.
- Double stack the tortillas and place about 1½–2 ounces in each tortilla and place on the plate, 4 per order. Garnish with lime wedges, the remainder of the small diced onion, and chopped cilantro.
