- Heat sunflower oil in a heavy bottom pot. Add the onions and and sauté until translucent. Add garlic and cook another 2 minutes. Add the riced vegetables and jalapeno. Cook another 2 minutes.
- Add the spices. Cook at low heat for 5 minutes. Add the diced tomatoes and crushed tomatoes. Cook for 20 minutes.
- Add the pulled oats and all three beans to the pot. Simmer for another 20-30 minutes. Adjust seasoning with kosher salt.
- Use the cilantro to garnish the bowl at service time.
