- For the wholesome turkey patty, in a large bowl place the ground turkey and all your seasoning, oatmeal, egg, and panko bread crumb. Mix well and season with salt and pepper to taste. Cook a small piece and taste for seasoning adjust if needed. Place in the cooler and remain cold overnight for best results.
- For the caramelized onions, in a sauté pan with avocado oil place the sliced red onion and season with salt, pepper, and sugar. Cook on low heat until all the moisture is evaporated. This make take up to 20 minutes. Reserve hot.
- For the garnish, slice the brie cheese, and assemble all other garnishes for the plate build.
- Make 4 8 ounce patties with the wholesome turkey mix. Place a whole or press down in the middle of each patty, this will help the patty to cook evenly and not bulge in the middle. In a hot pan sear for 5 minutes on each side, make sure the turkey patties reach and internal temperature of 165°F. For the last 2 minutes of cooking place the brie cheese on the patty so that it will melt. Deep fry the waffle waffle sweet potato fries for 4-5 minutes.
- For the plate, toast the buns and place the wholesome turkey patties on the bottom bun, top with the caramelized red onions, arugula and the roasted tomatoes. Top with bun and serve with waffle waffle sweet potato fries.
