Nuoc Cham Dressing

- Combine all ingredients and mix well.
Gi Tôm (Vietnamese Shrimp Salad)
- In a stock pot, add 1 cup of neutral oil and thinly sliced shallots. Bring to a simmer, slowly fry shallots until golden brown.
- While shallots are frying, poach shrimp until just cooked. Remove shallots and allow to drain on paper towels. Remove shrimp and allow to cool.
- Shave cabbages and red onion.
- Thinly slice cucumber and radishes. Halve cherry tomatoes.
- Combine all vegetables and shrimp in a large mixing bowl and add torn cilantro and mint leaves. Add ¼ cup of Nuoc Cham dressing and mix well.
- Garnish with crushed peanuts, fried shallots, and more torn herbs on top.
