In a medium size bowl add 3 lb.'s butter and .5 oz. salt. Blend until light and fluffy. In another bowl add 14oz of Fresno peppers diced (about 24 whole peppers). Coat diced peppers with 8 oz. sugar. Let stand until sugar has melted. Add the pepper & sugar mixture to the butter along with 8 oz. cilantro and
10 oz. lime juice powder. - Store in airtight container in freezer or cooler.

Lobster Roll
- Make the Fresno butter according to recipe. Apply butter to cut sides of the New England roll, toast on flat top until golden brown on both sides. Melt 2 oz. of Fresno butter in skillet, toss in 3 oz. of lobster meat in the Fresno butter and cook until hot.
- Place lobster meat in the roll and garnish with cilantro microgreens.
