Mexican Street Corn Wings

An innovative new product, Tyson® Boneless Thigh Wings, make it easy to create a variety of wing preparations on the fly. Use the ingredients of traditional Mexican street corn as a topping for deep-fried skewered wings; serve as a stunning shared appetizer.

Cumin-Citrus Mayo

Directions

For the Cumin-Citrus Mayo

  1. Toast cumin seeds in a sauté pan over medium heat until fragrant, about 2 minutes, stirring frequently; let cool slightly.
  2. Grind cumin in a spice grinder to a fine powder; stir into remaining ingredients in a bowl. Refrigerate in an airtight container up to 6 days. Makes about 1 cup.

For Serving

  1. Bake a portion of boneless thigh wings and sweet corn in convection oven at 375°F until chicken is crisp, about 15 minutes.
  2. Serve wings topped with a portion of each Cumin-Citrus Mayo, corn, queso fresco, cilantro, Tajín seasoning, and salt; serve with lime wedges.
