- For the seaweed kelp falafel, spray a sheet pan with oil. Arrange Seaweed Kelp Balls in one layer and sprinkle with approximately one ounce of water. Bake at 375°F for 9–10 minutes until golden brown and crispy. Internal temperature should reach 165°F.
- For the garnish, small dice the cucumber, red onion, slice the tomatoes, and the radish. Make a dressing with the hummus and ½ lemon juice and water if needed.
- For the sandwich, toast or grill the pita and begin the layering of ingredients. First the arugula and the tomato. Place the seaweed kelp balls in a pita. Finish with the diced cucumber, red onion, radish, and the hummus dressing. Enjoy!
