Directions

  1. Slice the citrus thin about ⅛–¼ of an inch and set aside. Make a simple syrup of equal parts sugar and water, bring to a boil. Place the citrus slices in the simple syrup. Remove from the pot and place on a lined baking sheet and place in the oven for 175°F–200°F. Let bake for 3–4 hours and every hour flip the slices. When nice and translucent set aside for garnish. These can be made up to one day in advance. Slice the strawberries the day of service and set a side.
  2. Place ice cream in a small bowl and in the center of the plate fill plate with the beignets and the sliced fruit. Garnish with Thai basil and mint optional, sprinkle with powdered sugar.
